In this thesis project, I used interviews to determine what types of barriers prevent food service facilities from implementing composting and food donation programs. The importance of keeping waste separate and confined was just one insight I gained through informational interviews. I also discuss how these insights can act as lessons for those working in food waste diversion in other parts of the world and in the future.
